  • Yield: 24 truffles 1x

Description

Pumpkin Cheesecake Truffles are creamy, spiced pumpkin cheesecake balls coated in rich chocolate — the perfect bite-sized fall treat for parties, Halloween, and Thanksgiving. No baking required, make-ahead friendly, and endlessly customizable for any festive dessert table.

Ingredients

Scale
  • 1 (8 oz / 225g) package cream cheese, softened
  • 1 cup (120g) pumpkin puree
  • 1 1/2 cups (180g) graham cracker crumbs
  • 2 cups (240g) powdered sugar
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • 12 oz (340g) white chocolate or dark chocolate melting wafers
  • Optional toppings: crushed graham crackers, sprinkles, cinnamon sugar

Instructions

  1. Prepare filling: Beat cream cheese until smooth. Add pumpkin puree, pumpkin pie spice, cinnamon, vanilla, and salt; mix until combined.
  2. Add dry ingredients: Gradually mix in powdered sugar and graham cracker crumbs until a thick dough forms.
  3. Shape truffles: Scoop and roll into balls, placing them on a parchment-lined baking sheet.
  4. Chill: Refrigerate for 1 hour or freeze for 30 minutes until firm.
  5. Melt chocolate: Gently melt chocolate wafers in microwave or double boiler until smooth.
  6. Dip & decorate: Coat truffles in chocolate, tapping off excess. Sprinkle with toppings before chocolate sets.
  7. Set & serve: Refrigerate until chocolate hardens, about 15–20 minutes.

Notes

  • Flavor variations: White Chocolate Pumpkin Spice (dust with cinnamon), Dark Chocolate Espresso (add espresso powder), Pecan Pie (roll in chopped pecans), Maple Drizzle (finish with maple glaze).
  • Holiday décor: Use orange candy melts and candy eyes for Halloween; crushed gingersnaps or gold dust for Thanksgiving.
  • Make-ahead: Store in fridge up to 1 week or freeze up to 2 months.
  • Diet swaps: Use gluten-free graham crackers for GF; dairy-free cream cheese and vegan chocolate for DF.
  • Tips: If filling is too soft, add more graham crumbs; melt chocolate gently to avoid burning; always chill before dipping.
