Instructions
- Prepare filling: Beat cream cheese until smooth. Add pumpkin puree, pumpkin pie spice, cinnamon, vanilla, and salt; mix until combined.
- Add dry ingredients: Gradually mix in powdered sugar and graham cracker crumbs until a thick dough forms.
- Shape truffles: Scoop and roll into balls, placing them on a parchment-lined baking sheet.
- Chill: Refrigerate for 1 hour or freeze for 30 minutes until firm.
- Melt chocolate: Gently melt chocolate wafers in microwave or double boiler until smooth.
- Dip & decorate: Coat truffles in chocolate, tapping off excess. Sprinkle with toppings before chocolate sets.
- Set & serve: Refrigerate until chocolate hardens, about 15–20 minutes.
