Pretzel Bratwurst Bites

Irresistible Pretzel Bratwurst Bites – The Ultimate German-Inspired Party Appetizer

  • Author: Lyndy
  • Total Time: 40 minutes
  • Yield: 12 bites 1x

Description

Pretzel Bratwurst Bites bring together smoky sausage, golden pretzel dough, and that perfect balance of soft and chewy texture. These German-inspired appetizers are ideal for Oktoberfest parties, game days, or festive gatherings. Beer-free but full of authentic flavor, they’re brushed with butter, sprinkled with coarse salt, and perfect for dipping in mustard or cheese sauce.

Ingredients

Scale
  • For the Pretzel Dough:
  • 2 ½ cups all-purpose flour (300 g)
  • 1 cup warm water (240 ml)
  • 1 tablespoon sugar
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • For the Bratwurst Filling:
  • 4 cooked bratwurst sausages (or kielbasa)
  • 1 tablespoon olive oil or butter (for browning)
  • For the Pretzel Bath & Topping:
  • 4 cups water
  • ¼ cup baking soda
  • 1 egg, beaten (for egg wash)
  • Coarse sea salt or pretzel salt
  • Optional Dipping Sauces: Spicy mustard, cheese sauce, honey mustard, or garlic aioli

Instructions

  1. Prepare the Dough: Combine warm water, sugar, and yeast. Let it sit for 5 minutes until foamy. Add salt, butter, and flour gradually, kneading until smooth and elastic. Cover and let rise for 45–60 minutes.
  2. Cook the Bratwurst: Brown bratwurst in olive oil over medium heat until golden. Cool slightly and cut into 1-inch pieces.
  3. Assemble the Bites: Punch down the dough, divide into 12 pieces, and roll each into a rope. Wrap around each bratwurst slice, sealing ends tightly. Rest 10 minutes.
  4. Prepare the Pretzel Bath: Boil 4 cups water with ¼ cup baking soda. Dip each wrapped piece for 20–30 seconds, then return to the baking sheet.
  5. Bake: Brush with egg wash, sprinkle coarse salt, and bake at 400°F (200°C) for 12–15 minutes until golden. Brush with melted butter after baking.

Notes

  • Don’t skip the baking soda bath: It gives pretzels their signature chew.
  • Seal ends well: Prevents unwrapping during baking.
  • Add cheese: Wrap with cheddar or Swiss for a gooey center.
  • Reheat: Warm in a 350°F oven for 5–7 minutes before serving.
  • Make-ahead: Assemble and freeze; bake fresh for parties.
