  • 1 tablespoon vegetable oil
  • 1 tablespoon minced garlic
  • 1 tablespoon fresh ginger, grated
  • 4 cups coleslaw mix (or ½ small head of cabbage, shredded)
  • ¼ cup soy sauce (low sodium if preferred)
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 8 oz rice noodles, cooked according to package
  • Optional toppings: chopped green onions, sesame seeds, sriracha

Instructions

Step 1: Cook the Noodles
Start by cooking the rice noodles according to the package instructions. Drain and rinse with cool water to stop cooking. Set aside.

Step 2: Brown the Pork
Heat vegetable oil in a large skillet over medium-high heat. Add ground pork and cook until browned, breaking it up with a spatula—about 5–7 minutes.

Step 3: Add Aromatics
Stir in garlic and ginger. Cook for 1 minute until fragrant.

Step 4: Add Veggies
Toss in the coleslaw mix or shredded cabbage. Sauté for 3–4 minutes until just tender but still crisp.

Step 5: Make the Sauce
Stir in soy sauce, hoisin sauce, rice vinegar, and sesame oil. Mix well to coat everything evenly.

Step 6: Combine with Noodles
Add the cooked rice noodles to the skillet. Toss until everything is heated through and coated in sauce.

Step 7: Serve and Garnish
Top with green onions, sesame seeds, or a drizzle of sriracha for heat. Serve hot and enjoy!

Notes

  • Don’t overcook the cabbage – You want it slightly crunchy for texture.
  • Use high heat – Helps sear the pork and keeps veggies crisp.
