- 2 medium potatoes, diced small
- 4 large eggs
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- 2 tablespoons olive oil or butter
- ¼ cup onion, finely chopped
- ¼ cup bell peppers, diced (optional)
- ¼ cup cheese (cheddar, feta, or mozzarella)
- 2 tablespoons milk or cream (for fluffier eggs)
- 2 tablespoons fresh parsley or green onions, chopped (for garnish)
Instructions
Heat olive oil or butter in a skillet over medium heat. Add diced potatoes, season with salt, pepper, garlic powder, and paprika, and sauté for 8-10 minutes, stirring occasionally, until golden brown and crispy.
Stir in onions and bell peppers (if using) and cook for another 2 minutes until softened.
In a bowl, whisk together eggs, milk, and a pinch of salt. Pour the eggs into the pan with the potatoes. Stir gently, letting the eggs cook slowly for 2-3 minutes until soft and fluffy.
Sprinkle with cheese and let it melt slightly. Remove from heat, garnish with fresh parsley or green onions, and serve immediately.
Notes
✔ Use Small Diced Potatoes – Cooks faster and gets crispier.
✔ Low Heat for Scrambled Eggs – Prevents overcooking and keeps them fluffy.
✔ Add Cheese at the End – Helps it melt evenly without burning.
