  • 2 tablespoons fresh parsley or green onions, chopped (for garnish)

Instructions

Step 1: Cook the Potatoes

Heat olive oil or butter in a skillet over medium heat. Add diced potatoes, season with salt, pepper, garlic powder, and paprika, and sauté for 8-10 minutes, stirring occasionally, until golden brown and crispy.

Step 2: Add the Vegetables

Stir in onions and bell peppers (if using) and cook for another 2 minutes until softened.

Step 3: Scramble the Eggs

In a bowl, whisk together eggs, milk, and a pinch of salt. Pour the eggs into the pan with the potatoes. Stir gently, letting the eggs cook slowly for 2-3 minutes until soft and fluffy.

Step 4: Add Cheese and Garnish
