			For the Meatloaf:
- 1 tablespoon vegetable oil (15 mL)
- 1/2 cup chopped onion (75 g)
- 1/2 cup chopped green bell pepper (75 g)
- 1/2 cup chopped celery (50 g)
- 2 large eggs, lightly beaten
- 1 (8-ounce) can crushed pineapple in juice, undrained (227 g)
- 1/2 cup ketchup (120 mL)
- 1 tablespoon Worcestershire sauce (15 mL)
- 1 teaspoon salt (5 g)
- 1/2 teaspoon ground black pepper (2 g)
- 1 pound ground pork (450 g)
- 1 pound ground beef (450 g)
- 1 cup bread crumbs (115 g)
For the Glaze:
- 1/2 cup packed brown sugar (100 g)
- 1 tablespoon cornstarch (8 g)
- 1 (8-ounce) can crushed pineapple in juice, undrained (227 g)
- 1 tablespoon lemon juice (15 mL)
- 1 tablespoon yellow mustard (15 mL)
Instructions
- Prep: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- Sauté Veggies: In a skillet, heat oil and cook onion, celery, and bell pepper until softened, about 5 minutes. Let cool.
- Mix Meatloaf: In a large bowl, combine pork, beef, eggs, sautéed vegetables, pineapple (with juice), ketchup, Worcestershire sauce, salt, pepper, and bread crumbs. Mix gently until combined.
- Bake: Press mixture into loaf pan. Bake uncovered for 45 minutes.
- Prepare Glaze: In a saucepan, whisk together brown sugar, cornstarch, pineapple, lemon juice, and mustard. Cook over medium heat 5–7 minutes until thickened.
- Glaze & Finish: Pour glaze over meatloaf. Bake another 15 minutes, or until internal temp reaches 160°F (71°C).
- Rest & Serve: Let rest 10 minutes before slicing. Serve with your favorite sides.
