Pineapple Balls – A Sweet and Easy Pineapple Christmas Candy Recipe

  • Author: Lyndy
  • Total Time: 30 minutes
  • Yield: 2024 balls 1x
  • Diet: Vegetarian

Description

Pineapple Balls are bite-sized, no-bake Christmas candies made with crushed pineapple, condensed milk, and coconut. These tropical treats are soft, chewy, and perfectly sweet — a festive favorite for gifting, dessert trays, or homemade holiday snacks that bring a touch of sunshine to your Christmas celebrations.

Ingredients

Scale
  • 1 can (20 oz / 567 g) crushed pineapple, drained slightly
  • 1 can (14 oz / 396 g) sweetened condensed milk
  • 2 cups unsweetened desiccated coconut (plus extra for coating)
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract

Optional Coatings:

  • Melted white or dark chocolate
  • Crushed nuts (almonds, cashews, or pistachios)
  • Holiday sprinkles or edible glitter
  • Powdered sugar or extra fine coconut flakes

Instructions

  1. Prepare the mixture: In a saucepan, combine crushed pineapple, condensed milk, butter, and vanilla. Stir over medium heat until thickened, about 10–12 minutes, until it pulls away from the sides of the pan. Let cool completely.
  2. Shape the balls: Scoop about 1 tablespoon of the mixture and roll into small balls. If too sticky, dust hands with powdered sugar or coconut.
  3. Coat and decorate: Roll each ball in shredded coconut or your desired coating. Optionally, dip in melted chocolate or sprinkle with festive toppings.
  4. Chill and serve: Place on a parchment-lined tray and refrigerate for at least 30 minutes before serving to firm up.

Notes

  • Cook until thick: The mixture should form a dough-like texture before cooling.
  • Drain pineapple lightly to avoid excess moisture.
  • Use desiccated coconut for the right consistency — shredded coconut can be too moist.
  • Store chilled in an airtight container for up to 7 days or freeze for up to 2 months.
  • Customize easily: Add nuts, drizzle with chocolate, or use colorful sprinkles for festive flair.
