Instructions
- Prepare the mixture: In a saucepan, combine crushed pineapple, condensed milk, butter, and vanilla. Stir over medium heat until thickened, about 10–12 minutes, until it pulls away from the sides of the pan. Let cool completely.
- Shape the balls: Scoop about 1 tablespoon of the mixture and roll into small balls. If too sticky, dust hands with powdered sugar or coconut.
- Coat and decorate: Roll each ball in shredded coconut or your desired coating. Optionally, dip in melted chocolate or sprinkle with festive toppings.
- Chill and serve: Place on a parchment-lined tray and refrigerate for at least 30 minutes before serving to firm up.
