  • Author: Lyndy
  • Total Time: 15

Description

When the weather heats up and the grill comes out, there’s nothing better than a refreshing fruit salad to balance all that smoky, savory barbecue goodness.

Ingredients

Scale

  • 3 cups fresh watermelon, cut into 1-inch cubes
  • 2 cups fresh pineapple, cut into small chunks
  • Juice of 1 lime
  • 1 tablespoon honey or agave (optional)
  • 2 tablespoons fresh mint or basil, chopped
  • Pinch of salt, to enhance sweetness
  • Optional: ¼ cup crumbled feta, chili flakes, or lime zest for garnish

Instructions

Step 1: Prep the Fruit

Use a sharp knife to cube your watermelon and pineapple into even, bite-sized pieces. Transfer to a large mixing bowl.

Step 2: Add Flavor Boosters

Drizzle the lime juice and honey over the fruit. Sprinkle in the salt and gently toss to coat everything evenly.

Step 3: Mix in the Herbs

Fold in chopped fresh mint or basil, reserving a little for garnish.

Step 4: Garnish and Serve

Top with feta, chili flakes, or extra herbs if desired. Serve immediately or chill for 20 minutes to enhance the flavors.

Notes

Watermelon Tips:

  • Look for a yellow field spot—this means it ripened on the vine.
  • The melon should feel heavy for its size, signaling juicy flesh.
  • A hollow sound when tapped is a good sign of ripeness.

Pineapple Tips:

  • Choose one with a sweet, fragrant smell at the base.
  • The skin should be mostly golden with a bit of green.
  • Leaves should pull out easily from the crown when ripe.
