Description

Need a dinner that’s quick, healthy, and absolutely packed with flavor? This Pesto Shrimp Asparagus Pasta brings it all together in one colorful, satisfying dish.

Ingredients

Scale

12 oz spaghetti, linguine, or pasta of choice
1 lb large shrimp, peeled and deveined
1 bunch asparagus, trimmed and cut into 2-inch pieces
1 cup pesto (store-bought or homemade)
2 tablespoons olive oil
Salt and pepper to taste
Red pepper flakes (optional, for heat)
Juice of ½ lemon (optional, for brightness)
Fresh parmesan cheese, for garnish

Optional Add-ins:
Cherry tomatoes, spinach, mushrooms, or sun-dried tomatoes
A handful of fresh basil or parsley for garnish

Instructions

Step 1 – Cook the pasta
Bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

Step 2 – Cook the asparagus
In a large skillet over medium heat, add 1 tablespoon of olive oil. Add the asparagus and sauté for 3–4 minutes until crisp-tender. Remove from the skillet and set aside.

Step 3 – Cook the shrimp
In the same skillet, add the remaining tablespoon of olive oil. Season shrimp with salt, pepper, and red pepper flakes (if using). Cook for 1–2 minutes per side, or until pink and opaque. Do not overcook. Set aside with the asparagus.

Step 4 – Combine with pesto
Reduce the heat to low. Add the cooked pasta to the skillet. Stir in the pesto and a splash of the reserved pasta water to loosen the sauce if needed. Toss until well coated.

Step 5 – Add shrimp and asparagus
Return the shrimp and asparagus to the pan and gently toss to combine. Add a squeeze of lemon juice for extra brightness.

Step 6 – Serve and garnish
Plate the pasta and top with fresh parmesan, black pepper, or extra herbs. Serve warm and enjoy!

Notes

Cook shrimp just until they turn pink and curl into a “C” shape
Don’t crowd the skillet—cook in batches if needed
Asparagus should be bright green with a bit of crunch
