Ingredients

  • 2 flatbreads or naan
  • 1 1/2 cups cooked chicken breast, shredded or chopped
  • 1/3 cup pesto (homemade or store-bought)
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • Olive oil spray or drizzle (optional)
  • Salt and black pepper, to taste
  • Fresh basil or arugula, for garnish (optional)
  • Crushed red pepper flakes (optional)

Instructions

  • 1. Preheat the oven
    Set your oven to 400°F (200°C). Place a baking sheet inside while it heats to help the bottom of the flatbreads crisp up.

    2. Prepare your toppings
    Shred or dice your cooked chicken breast. Slice the cherry tomatoes and red onion. Have your shredded cheese and pesto ready.

    3. Assemble the flatbreads
    Lay the flatbreads on parchment or a lightly greased surface. Spread pesto evenly over each one. Add shredded chicken, tomatoes, red onion, and mozzarella cheese. Season with a little salt, pepper, and red pepper flakes if using.

    4. Bake the flatbreads
    Transfer the flatbreads onto the hot baking sheet and bake for 10–12 minutes, or until the cheese is melted and bubbling and the flatbread edges are golden brown.

    5. Garnish and serve
    Top with fresh basil or arugula for color and freshness. Slice into wedges and serve immediately.
