Instructions
- Prepare the crust: Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter until combined. Press evenly into a parchment-lined 9×13-inch baking dish. Bake for 8 minutes and let cool.
- Make cheesecake layer: Beat cream cheese until smooth. Add sugar, eggs, and vanilla; mix until creamy. Spread over cooled crust.
- Prepare peach filling: In a bowl, combine peaches, brown sugar, cornstarch, and cinnamon. Spoon over cheesecake layer.
- Make cobbler topping: Mix flour, brown sugar, and salt. Cut in cold butter until coarse crumbs form. Sprinkle over peaches.
- Bake: Bake 40–45 minutes, until topping is golden brown. Cool completely before slicing into bars.
