Instructions

  1. Preheat Oven: Preheat to 350°F (175°C). Grease and flour a 9-inch round cake pan or line with parchment.
  2. Prep Peaches: Peel and dice peaches. Drain well if using canned.
  3. Mix Dry Ingredients: In a bowl, whisk flour, baking powder, baking soda, and salt. Set aside.
  4. Cream Butter & Sugar: In a large bowl, beat butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
  5. Combine: Gradually add dry ingredients alternating with sour cream, starting and ending with dry. Mix just until combined.
  6. Fold in Peaches: Gently fold diced peaches into batter.
  7. Assemble: Pour batter into pan, smooth top, then sprinkle with brown sugar and cinnamon. Dot with butter pieces.
  8. Bake: Bake 35–40 minutes, until toothpick comes out clean. Cool 10 minutes in pan, then transfer to rack.
  9. Serve: Slice and enjoy warm or at room temperature.
