Description

When it comes to effortless and vibrant spring desserts, few recipes are as soul-satisfying as this Easy Peach and Raspberry Cobbler.

Ingredients

Scale

Fruit Base:

  • 400g (about 2 cups) sliced peaches (fresh or frozen, peeled if fresh)
  • 150g (about 1 cup) raspberries (fresh or frozen)
  • 50g (¼ cup) granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon (optional)

Cobbler Topping:

  • 125g (1 cup) all-purpose flour
  • 100g (½ cup) granulated sugar
  • 2 teaspoons baking powder
  • Pinch of salt
  • 120ml (½ cup) milk
  • 60g (¼ cup) unsalted butter, melted

Instructions

Step 1: Preheat the Oven
Set your oven to 180°C (350°F) and lightly grease your baking dish with butter or a bit of oil spray.

Step 2: Prepare the Fruit
In a mixing bowl, combine the peaches and raspberries with the sugar, vanilla extract, and cinnamon. Toss gently to coat the fruit evenly, then pour the mixture into the prepared baking dish.

Step 3: Mix the Batter
In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk and melted butter, stirring just until combined. Be careful not to overmix—lumps are okay.

Step 4: Add Topping Over the Fruit
Spoon the batter over the fruit mixture. It doesn’t need to fully cover the fruit; it will spread out while baking. The uneven look adds a rustic charm.

Step 5: Bake the Cobbler
Place the dish in the oven and bake for 35–40 minutes, or until the top is golden brown and the fruit is bubbling. A toothpick inserted in the topping should come out clean.

Step 6: Cool Slightly and Serve
Let the cobbler cool for about 10 minutes before serving. It’s best enjoyed warm, possibly with a spoonful of vanilla yogurt or a sprinkle of powdered sugar.

Notes

  • Use fresh fruit when in season for optimal flavor, but frozen works well too—no need to thaw beforehand.
  • Don’t overmix the batter; overworking it can lead to a dense topping.
  • Add a pinch of nutmeg or a splash of lemon juice to brighten the fruit filling.
  • Double the recipe for larger crowds and bake in a 9×13 inch dish.
