Pancake Casserole : Delicious & Festive Breakfast

If you’re searching for a cozy, satisfying breakfast idea that feeds a crowd and feels like a warm hug on a plate, look no further than this Pancake Casserole.

Ingredients

Scale

  • 68 pre-cooked pancakes (homemade or store-bought)
  • 4 large eggs
  • 1¼ cups milk (whole or 2%)
  • ¼ cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon (optional)
  • Pinch of salt
  • Butter or nonstick spray for greasing

Optional Toppings:

  • Fresh berries
  • Powdered sugar
  • Whipped cream
  • Warm maple syrup
  • Chopped nuts or chocolate chips

Instructions

1. Preheat and Prepare

Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray.

2. Arrange Pancakes

You can layer full pancakes in the baking dish like lasagna, or cut them into quarters or cubes and scatter them in an even layer. Either works—it depends on the look and texture you want.

3. Make the Custard

In a mixing bowl, whisk together the eggs, milk, maple syrup (or honey), vanilla, cinnamon, and salt until smooth.

4. Pour Over Pancakes

Slowly pour the custard mixture evenly over the pancake pieces. Gently press the pancakes down to help them absorb the liquid.

5. Let It Soak (Optional)

For extra moist texture and flavor, let the casserole sit for 15–30 minutes—or cover and refrigerate overnight if making ahead.

6. Bake

Place the dish in the oven and bake for 30–40 minutes, or until the top is lightly golden and the custard is set in the center. If the top starts browning too quickly, loosely cover with foil halfway through.

7. Cool Slightly and Serve

Let the casserole cool for 5–10 minutes before slicing. Serve warm with your favorite toppings and enjoy!

Notes

  • Use slightly stale or cooled pancakes – They absorb the custard better without becoming soggy
  • Don’t skip the vanilla or cinnamon – These add depth and warmth to the flavor
  • Soak overnight for the best texture – Especially helpful for weekend mornings or guests
