- 1 ½ cups all-purpose flour (180g)
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground ginger
- 1 tablespoon fresh grated ginger
- Zest of 1 large orange
- ⅓ cup fresh orange juice (80ml)
- ½ cup raw honey (120ml)
- ½ cup unsalted butter, melted and cooled (115g)
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- Optional: ½ teaspoon ground cinnamon
- Optional glaze: 1 tablespoon orange juice + ½ cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease or line a muffin tin or mini cake molds.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, ground ginger, and cinnamon if using.
- In a large bowl, whisk eggs, then add honey, melted butter, vanilla, orange juice, grated ginger, and orange zest. Mix well.
- Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Spoon batter into prepared molds, filling each about ¾ full.
- Bake for 18–22 minutes, or until a toothpick inserted comes out clean.
- Cool in pan for 5 minutes, then transfer to a wire rack.
- Optional: Mix orange juice and powdered sugar for glaze, and drizzle over cooled cakes.

- Use fresh orange zest for the brightest flavor.
- Grated fresh ginger adds a subtle spicy note—don’t skip it.
- For a nutty variation, top with sliced almonds or pistachios before baking.
- Substitute butter with melted coconut oil for a dairy-free version.
