  • 1 ½ cups all-purpose flour (180g)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground ginger
  • 1 tablespoon fresh grated ginger
  • Zest of 1 large orange
  • ⅓ cup fresh orange juice (80ml)
  • ½ cup raw honey (120ml)
  • ½ cup unsalted butter, melted and cooled (115g)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • Optional: ½ teaspoon ground cinnamon
  • Optional glaze: 1 tablespoon orange juice + ½ cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a muffin tin or mini cake molds.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, ground ginger, and cinnamon if using.
  3. In a large bowl, whisk eggs, then add honey, melted butter, vanilla, orange juice, grated ginger, and orange zest. Mix well.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  5. Spoon batter into prepared molds, filling each about ¾ full.
  6. Bake for 18–22 minutes, or until a toothpick inserted comes out clean.
  7. Cool in pan for 5 minutes, then transfer to a wire rack.
  8. Optional: Mix orange juice and powdered sugar for glaze, and drizzle over cooled cakes.

Notes

  • Use fresh orange zest for the brightest flavor.
  • Grated fresh ginger adds a subtle spicy note—don’t skip it.
  • For a nutty variation, top with sliced almonds or pistachios before baking.
  • Substitute butter with melted coconut oil for a dairy-free version.
