Instructions
In a large bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 5–10 minutes, until foamy.
Add flour, salt, olive oil, and chopped onions (raw or caramelized). Mix until dough comes together. Knead by hand for 8–10 minutes or with a mixer for 5–6 minutes until dough is smooth.
Transfer dough to a lightly greased bowl. Cover with a towel and let rise in a warm place for 1–1.5 hours, until doubled in size.
Punch down the dough and shape into a loaf or rolls. Place in a greased loaf pan or on a baking sheet. Let rise again for 30–45 minutes.
Preheat oven to 375°F (190°C). Bake for 25–30 minutes, or until golden brown and the bread sounds hollow when tapped.
Let cool on a wire rack for at least 10 minutes before slicing. Enjoy warm with butter or as a sandwich base.
