Rice Base:

  • 1 cup jasmine rice (or long-grain white rice), rinsed
  • 1 1/2 cups water or vegetable broth

Mushrooms & Vegetables:

  • 8 oz (225 g) mushrooms (shiitake, cremini, or button), sliced
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup chopped green onions (plus more for garnish)

Seasonings & Aromatics:

  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon salt (adjust to taste)
  • Pinch of black pepper
  • Optional: drizzle of toasted sesame seeds for garnish

Instructions

  1. Prepare Ingredients: Rinse rice, slice mushrooms, and chop onion, garlic, and green onions.
  2. Cook the Mushrooms: Heat sesame oil in a saucepan over medium heat. Sauté onions for 2–3 minutes. Add garlic, cook 30 seconds, then add mushrooms, salt, and pepper. Cook 4–5 minutes until softened.
  3. Simmer the Rice: Stir in rinsed rice, water or broth, and soy sauce. Cover and bring to a simmer. Reduce heat to low and cook 15–18 minutes, until rice is tender and liquid absorbed.
  4. Fluff & Serve: Let rest 5 minutes. Fluff with a fork, garnish with green onions and sesame seeds, and serve warm.

Notes

  • Rinse rice thoroughly to remove excess starch and prevent stickiness.
  • Don’t lift the lid while cooking for even steam.
  • Use broth for deeper flavor or adjust soy sauce to taste.
  • For a casserole twist: transfer to a dish, top with breadcrumbs and cheese, bake at 350°F for 10–15 minutes.
  • Store leftovers in fridge up to 3 days. Reheat with a splash of broth or water.
