  • 2 lbs boneless, skinless chicken thighs
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 tsp coriander
  • ½ tsp cinnamon
  • ½ tsp black pepper
  • 1 tsp salt
  • 2 tbsp lemon juice
  • 2 cups basmati rice, rinsed
  • 4 cups chicken broth
  • 1 medium onion, diced
  • Optional toppings: fresh parsley, cucumber salad, tahini drizzle

Instructions

  1. Marinate chicken: Mix olive oil, garlic, spices, lemon juice, and salt in a bowl. Coat chicken thighs and marinate at least 30 minutes.
  2. Sear chicken: Heat a Dutch oven over medium-high, sear chicken 2–3 minutes per side until golden. Remove and set aside.
  3. Sauté onions: Add onions to the pot, cooking until softened and fragrant.
  4. Add rice & broth: Stir in rinsed basmati rice and coat in onion mixture. Pour in broth and bring to a simmer.
  5. Combine & cook: Nestle chicken into the rice, cover, and cook on low 20–25 minutes until rice is tender and chicken is cooked through.
  6. Rest & garnish: Turn off heat, rest 5 minutes, fluff rice, and garnish with parsley or toppings before serving.

Notes

  • Chicken thighs are preferred for juicier results.
  • Rinse basmati rice to remove excess starch.
  • Marinate overnight for deeper flavor.
  • Don’t lift the lid during cooking to ensure even steaming.
  • Add toppings like pickled onions, cucumber salad, or tahini drizzle for extra flavor.
