- 2 cups cherry or grape tomatoes, halved
- 3 tbsp olive oil, divided
- 3 tbsp balsamic vinegar
- 2 cloves garlic, minced
- 1 tsp dried Italian seasoning (or oregano + basil mix)
- Salt and pepper, to taste
- 1/4 cup fresh basil leaves, torn
- Optional: 1 tbsp honey or maple syrup (for sweeter glaze)
Instructions
- Prep Chicken: Pat chicken breasts dry. Season with salt, pepper, and half the Italian seasoning.
- Sear: Heat 2 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden. Remove and set aside.
- Make Glaze: In a small bowl, whisk balsamic vinegar, remaining olive oil, garlic, and remaining Italian seasoning. Add honey or maple syrup if desired.
- Cook Tomatoes: Reduce heat to medium. Add cherry tomatoes to skillet, sauté 2 minutes, then pour in glaze and stir.
- Finish Cooking: Return chicken to skillet, spoon glaze over top, and transfer to a 400°F (200°C) oven. Roast 12–15 minutes until chicken reaches 165°F (74°C).
- Serve: Garnish with fresh basil and spoon tomatoes and glaze over chicken before serving.
