Ingredients
Scale
- 2 ripe bananas, mashed
- 1 cup fresh strawberries, chopped
- 1 ½ cups whole wheat flour (or a gluten-free flour blend for a gluten-free option)
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 large eggs
- ¼ cup honey or maple syrup
- ¼ cup vegetable oil or coconut oil
- 1 teaspoon vanilla extract
- ½ cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat Your Oven: Preheat to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
- Prepare the Wet Ingredients: Mash the bananas with a fork until smooth. Add eggs, honey (or maple syrup), oil, and vanilla. Mix until combined.
- Prepare the Dry Ingredients: In a separate bowl, whisk the flour, baking soda, cinnamon, and salt. Gradually mix into the wet ingredients until just combined.
- Fold in the Strawberries: Add the chopped strawberries and gently fold them into the batter.
- Scoop the Batter: Spoon the batter into the muffin tin, filling each cup about ¾ of the way full.
- Bake: Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.
Notes
- Use Ripe Bananas: The riper the bananas, the sweeter the muffins will be.
- Don’t Overmix: Stir the ingredients gently to avoid dense muffins.
- Drain Excess Moisture from Strawberries: Pat the strawberries dry before adding them to the batter to avoid too much moisture.
- Customize with Add-ins: Try adding oats, nuts, or coconut flakes for extra texture.
