Description
No Bake Pumpkin Pie Balls are a festive, fuss-free dessert made with pumpkin puree, vanilla cookies, warm spices, and dipped in white chocolate. Ready in under 30 minutes, they’re perfect for holiday parties, Thanksgiving, or cozy fall snacking—no oven needed!
Ingredients
Scale
- 1 cup pumpkin puree (not pumpkin pie filling)
- 1 ½ cups crushed vanilla wafer cookies (about 40 cookies)
- ½ teaspoon pumpkin pie spice
- ½ teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- ⅛ teaspoon salt
- ¾ cup white chocolate chips or white almond bark (for coating)
- Optional toppings: extra cinnamon, crushed cookies, or festive sprinkles
Instructions
- Place vanilla wafers in a food processor and pulse into fine crumbs.
- In a bowl, mix pumpkin puree, cookie crumbs, pumpkin pie spice, cinnamon, vanilla extract, and salt until moldable. Add more crumbs if too wet.
- Roll mixture into small balls using a tablespoon or cookie scoop.
- Place balls on parchment-lined tray and refrigerate for 30 minutes.
- Melt white chocolate or almond bark in 30-second increments, stirring until smooth.
- Dip chilled balls into melted chocolate, letting excess drip off. Return to tray.
- Sprinkle with desired toppings before chocolate sets.
- Refrigerate for 15–20 minutes until coating is firm.
Notes
- Use dry pumpkin puree—drain with paper towels if too wet.
- Crush cookies finely for a smooth texture.
- Chill before dipping to help balls stay firm.
- Decorate quickly—chocolate sets fast.
- Store in the fridge up to 5 days or freeze up to 1 month.
