  • 1/2 cup (120ml) coconut cream
  • 1/3 cup (80ml) maple syrup or date syrup
  • 2 teaspoons pure peppermint extract
  • 2 tablespoons melted coconut oil
  • 1/4 teaspoon sea salt

Optional Toppings:

  • Crushed peppermint candies (sugar-free if desired)
  • Shaved dark chocolate (dairy-free)
  • Coconut whipped cream
  • Fresh mint leaves

Instructions

  1. Prepare the crust: In a food processor, combine almond flour, cocoa powder, salt, coconut oil, and maple syrup. Pulse until a sticky dough forms. Press evenly into a 9-inch tart pan, making sure it goes up the sides. Chill for 15 minutes.
  2. Make the filling: Blend soaked cashews, coconut cream, maple syrup, peppermint extract, and melted coconut oil until smooth and creamy. Adjust sweetness and mint flavor to taste.
  3. Assemble the tart: Pour the peppermint filling over the crust and smooth the surface with a spatula.
  4. Chill: Refrigerate for at least 4 hours, or freeze for 1 hour if you’re short on time.
  5. Decorate and serve: Top with crushed peppermint candy, chocolate shavings, or coconut whipped cream. Slice and enjoy chilled.
