  • 1 packet (3.4 oz / 96g) instant vanilla pudding mix
  • ¼ cup powdered sugar
  • 1 tsp orange extract (or more, to taste)
  • Orange gel or liquid food coloring (optional)
  • 2½ cups crushed vanilla wafers (about 1 standard box)
  • 2½ cups white chocolate chips (for coating)
  • 1 tbsp coconut oil or shortening (for smoother coating)
  • Optional: Orange zest or sprinkles for garnish

Instructions

  1. Mix the filling: In a large mixing bowl, beat the softened cream cheese until smooth. Add the vanilla pudding mix, powdered sugar, and orange extract. Mix until fully combined and creamy.
  2. Add color: If desired, mix in a few drops of orange food coloring to enhance that signature “creamsicle” color.
  3. Stir in wafers: Add crushed vanilla wafers and mix until a soft dough forms. If the mixture feels too sticky, add a little more crushed wafers.
  4. Roll the truffles: Using a small cookie scoop or spoon, roll into 1-inch balls and place on a parchment-lined baking sheet.
  5. Chill: Freeze for 20–30 minutes to firm up before dipping.
  6. Prepare the coating: In a microwave-safe bowl, melt white chocolate chips with coconut oil in 20-second intervals, stirring between each until smooth.
  7. Dip & decorate: Dip each truffle into the melted white chocolate using a fork or toothpick. Let excess drip off, then place back on parchment paper. Add sprinkles or zest if using.
  8. Set: Let them set at room temperature or refrigerate until firm.
