Ingredients
1 cup almond flour 1/2 cup vanilla protein powder (whey or plant-based) 2 tablespoons cashew butter (or almond butter) 2 tablespoons maple syrup or monk fruit syrup 1/2 teaspoon vanilla extract 1/4 cup dried blueberries 2 tablespoons mini white chocolate chips (optional) 1–2 tablespoons milk (plant-based or dairy), as needed
Instructions
1. In a mixing bowl, stir together almond flour and protein powder until combined. 2. Add cashew butter, maple or monk fruit syrup, and vanilla extract. Stir until clumpy. 3. Fold in dried blueberries and optional white chocolate chips. Add milk 1 tablespoon at a time until dough-like. 4. Roll dough into 12–14 bite-sized balls using hands or a cookie scoop. 5. Chill bites in the fridge for at least 20 minutes to set. Store in an airtight container in the fridge or freezer.
