Ingredients
- 3 ripe nectarines, diced (about 2 ½ cups)
- ¼ cup red onion, finely chopped
- 1 small red chili or jalapeño, minced (remove seeds for less heat)
- 1 tablespoon fresh lime juice
- 1 tablespoon extra virgin olive oil
- 2 tablespoons chopped fresh cilantro
- 1 pinch sea salt, to taste
- Optional: ½ teaspoon lime zest, 1 teaspoon maple syrup (if nectarines aren’t very sweet)
Instructions
Step 1: Dice the nectarines
Rinse and dry your nectarines. Dice them into small, uniform cubes. No need to peel them unless preferred—the skin adds color and nutrients.
Step 2: Chop the add-ins
Finely dice the red onion, mince the chili (or jalapeño), and chop the fresh cilantro. If you’re using lime zest, grate it now.
Step 3: Combine ingredients
In a medium mixing bowl, combine the nectarines, onion, chili, lime juice, olive oil, cilantro, and salt. Stir gently to combine, being careful not to mash the fruit.
Step 4: Taste and adjust
Taste your salsa and adjust the salt, acid, or sweetness as needed. If your nectarines are tart, a small amount of maple syrup can help round out the flavors.
Step 5: Chill (optional)
You can serve the salsa immediately, but chilling it for 15–30 minutes enhances the flavors and helps everything meld.
