Instructions
- Prepare filling: In a saucepan, melt butter. Add apples, sugars, cinnamon, and nutmeg. Cook 5–7 minutes until softened. Stir in cornstarch slurry to thicken, remove from heat, stir in vanilla, and cool slightly.
- Cut crusts: Roll out pie crusts and cut 4-inch circles. Press into greased muffin tin cups.
- Fill pies: Spoon ~2 tablespoons of apple mixture into each crust.
- Add tops: Cut smaller circles, strips for lattice, or decorative cutouts. Place on top and pinch edges to seal.
- Brush & bake: Brush with egg wash. Bake at 375°F (190°C) for 20–25 minutes until golden and bubbling.
