Description

These Muffin Tin Mini Apple Pies pack all the cozy, spiced flavor of a classic apple pie into perfectly portioned, bite-sized treats. Baked in a muffin tin with cinnamon-spiced apple filling and golden crust, they’re ideal for fall parties, Thanksgiving, or family gatherings. Portable, fun, and kid-friendly, these mini pies are as practical as they are delicious.

Ingredients

Scale
  • 2 refrigerated pie crusts (or homemade)
  • 4 medium apples, peeled and diced (Granny Smith or Honeycrisp)
  • 2 tablespoons unsalted butter
  • ½ cup brown sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 teaspoons cornstarch (mixed with 2 teaspoons water)
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)
  • Optional toppings: caramel drizzle, whipped cream, or powdered sugar

Instructions

  1. Prepare filling: In a saucepan, melt butter. Add apples, sugars, cinnamon, and nutmeg. Cook 5–7 minutes until softened. Stir in cornstarch slurry to thicken, remove from heat, stir in vanilla, and cool slightly.
  2. Cut crusts: Roll out pie crusts and cut 4-inch circles. Press into greased muffin tin cups.
  3. Fill pies: Spoon ~2 tablespoons of apple mixture into each crust.
  4. Add tops: Cut smaller circles, strips for lattice, or decorative cutouts. Place on top and pinch edges to seal.
  5. Brush & bake: Brush with egg wash. Bake at 375°F (190°C) for 20–25 minutes until golden and bubbling.
  6. Cool & serve: Cool in pan 10 minutes before removing. Serve warm with optional toppings.

Notes

  • Use firm apples like Granny Smith or Honeycrisp for best texture.
  • Don’t overfill – filling expands as it bakes.
  • For extra flavor, add a splash of lemon juice or a streusel topping.
  • Let pies cool before removing to prevent breaking.
  • Serve in cupcake liners for easy handling at parties.
