For the Filling:
- 8 oz mozzarella cheese, cut into thin sticks
For the Baking Soda Bath:
- 4 cups water
- ¼ cup baking soda
For the Topping:
- 1 egg, beaten (for egg wash)
- 1 tablespoon coarse salt (for topping)
- 2 tablespoons butter, melted (for brushing after baking)
Instructions
Step 1: Prepare the Dough
- In a large bowl, whisk together flour, yeast, sugar, and salt.
- Add warm water and melted butter, mixing until a soft dough forms.
- Knead on a floured surface for 5-7 minutes, until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
Step 2: Shape & Stuff the Pretzels
- Preheat oven to 425°F (220°C).
- Punch down the dough and divide into 8 equal pieces.
- Roll each piece into a 10-inch rope, then flatten slightly.
- Place a mozzarella stick along the center and fold the dough over, pinching edges to seal.
- Shape into a pretzel twist or leave as a cheese-stuffed breadstick.
Step 3: Give the Pretzels a Baking Soda Bath
- In a large pot, bring 4 cups of water to a boil.
- Add baking soda and stir.
- Drop each pretzel into the bath for 20-30 seconds, then place on a parchment-lined baking sheet.
Step 4: Bake the Pretzels
- Brush pretzels with egg wash and sprinkle with coarse salt.
- Bake for 12-15 minutes, until golden brown.
Step 5: Add the Finishing Touches & Serve
- Brush warm pretzels with melted butter for extra flavor.
- Serve hot with marinara sauce, garlic butter, or honey mustard.
