For the Pretzel Dough:

  • 3 ½ cups all-purpose flour
  • 1 packet (2 ¼ tsp) instant yeast
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 cup warm water (110°F / 45°C)
  • 2 tablespoons unsalted butter, melted

For the Filling:

  • 8 oz mozzarella cheese, cut into thin sticks

For the Baking Soda Bath:

  • 4 cups water
  • ¼ cup baking soda

For the Topping:

  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse salt (for topping)
  • 2 tablespoons butter, melted (for brushing after baking)

Instructions

Step 1: Prepare the Dough

  1. In a large bowl, whisk together flour, yeast, sugar, and salt.
  2. Add warm water and melted butter, mixing until a soft dough forms.
  3. Knead on a floured surface for 5-7 minutes, until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

Step 2: Shape & Stuff the Pretzels

  1. Preheat oven to 425°F (220°C).
  2. Punch down the dough and divide into 8 equal pieces.
  3. Roll each piece into a 10-inch rope, then flatten slightly.
  4. Place a mozzarella stick along the center and fold the dough over, pinching edges to seal.
  5. Shape into a pretzel twist or leave as a cheese-stuffed breadstick.

Step 3: Give the Pretzels a Baking Soda Bath

  1. In a large pot, bring 4 cups of water to a boil.
  2. Add baking soda and stir.
  3. Drop each pretzel into the bath for 20-30 seconds, then place on a parchment-lined baking sheet.

Step 4: Bake the Pretzels

  1. Brush pretzels with egg wash and sprinkle with coarse salt.
  2. Bake for 12-15 minutes, until golden brown.

Step 5: Add the Finishing Touches & Serve

  1. Brush warm pretzels with melted butter for extra flavor.
  2. Serve hot with marinara sauce, garlic butter, or honey mustard.

Notes
