Instructions
- Prepare the Crust: Preheat oven to 325°F (163°C). Mix graham crumbs, sugar, and melted butter until sandy. Press into a 9-inch springform pan. Bake 10 minutes and cool.
- Make the Filling: Beat softened cream cheese and sugar until smooth. Mix in sour cream and vanilla. Add eggs one at a time until combined. Pour over cooled crust.
- Bake: Wrap pan in foil and set inside a roasting pan. Add hot water to create a water bath. Bake 55–65 minutes until center is just set. Turn off oven, crack door, let rest 1 hour. Refrigerate 4 hours or overnight.
- Add Ganache: Heat cream until simmering; pour over chocolate chips. Rest 2 minutes, stir smooth, spread over cooled cheesecake.
- Toast Marshmallows: Top with mini marshmallows and toast with a torch or broil 1–2 minutes until golden. Garnish as desired.
