Instructions

  1. Prepare zucchini: Grate zucchini with a box grater. Lightly blot with paper towels to remove excess moisture, but don’t dry completely.
  2. Mix wet ingredients: In a large bowl, whisk eggs, oil, brown sugar, granulated sugar, and vanilla until smooth.
  3. Add dry ingredients: Stir in flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Mix gently until just combined.
  4. Fold in zucchini & chocolate: Add grated zucchini and chocolate chips, folding until evenly distributed.
  5. Bake: Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin. Divide batter evenly. Bake 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool & enjoy: Let muffins cool in the tin 5 minutes, then transfer to a wire rack. Serve warm or store for later.
