  • 2 green onions, chopped
  • 1 cup bok choy or spinach, chopped
  • 1/2 block firm tofu, cubed (optional)

For the Teriyaki Mushrooms:

  • 1.5 cups mushrooms (shiitake, cremini, or oyster), sliced
  • 2 tbsp soy sauce
  • 1 tbsp mirin or rice vinegar
  • 1 tbsp maple syrup
  • 1 tsp sesame oil

Instructions

  1. Cook noodles: Boil udon according to package instructions. Drain, rinse, and set aside.
  2. Sauté aromatics: In a soup pot, cook garlic and ginger in a little oil until fragrant.
  3. Build broth: Add vegetable broth. In a small bowl, dissolve miso in warm broth, then return to pot. Stir in soy sauce and bok choy. Simmer 5–7 minutes.
  4. Make mushrooms: In a pan, heat sesame oil. Add mushrooms and sauté. Stir in soy sauce, mirin, and maple syrup. Cook until glazed and caramelized.
  5. Assemble soup: Add noodles to broth, ladle into bowls, and top with teriyaki mushrooms, green onions, and tofu if desired. Serve hot.
