Instructions
- Preheat oven: Heat your oven to 325°F (163°C). Line a muffin tin with cupcake liners.
- Prepare the crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter. Add about 1 tablespoon to each liner and press down firmly. Bake for 5 minutes, then set aside.
- Make the filling: In a large bowl, beat softened cream cheese until smooth. Add sugar and beat again. Mix in eggs one at a time. Stir in vanilla and sour cream until just combined.
- Fill the liners: Spoon cheesecake batter over the crusts, filling each about 3/4 full.
- Bake: Bake for 18–20 minutes, or until centers are slightly jiggly. Do not overbake.
- Cool: Let cool on the counter for 1 hour, then refrigerate for at least 4 hours or overnight.
- Decorate: Add whipped cream, berries, peppermint, sprinkles, M&Ms, or gingerbread toppings as desired.
