Few dishes live up to their name quite like this one. The Million Dollar Potato Casserole is everything you crave in comfort food — rich, creamy, cheesy, and crowned with a crunchy golden topping.


Ingredients

1 bag (28–30 oz) frozen diced hash brown potatoes, thawed
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
2 cups shredded sharp cheddar cheese
1/4 cup finely diced onion
1/2 teaspoon garlic powder
Salt and pepper to taste
2 cups crushed cornflakes (or crushed potato chips)
1/4 cup melted butter


Instructions

Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish. In a large mixing bowl, combine the cream of chicken soup, sour cream, shredded cheese, diced onion, garlic powder, salt, and pepper. Stir until fully mixed and creamy. Add the thawed diced potatoes and stir gently to coat them with the creamy mixture.

Pour the potato mixture into the prepared baking dish and spread it out evenly. In a small bowl, mix the crushed cornflakes with melted butter until coated. Sprinkle this mixture evenly over the top of the casserole.

Bake uncovered for 45 minutes or until the top is golden brown and the edges are bubbly. Let cool for 5–10 minutes before serving so the casserole can set slightly.

Notes

Make sure your hash browns are completely thawed before mixing; excess moisture can make the casserole runny. You can prep the entire dish the night before and refrigerate it, then just top and bake when ready. For extra richness, stir in a half block of softened cream cheese. And if you like spice, a pinch of cayenne or chopped green chilies can give it a little kick.
