These milk chocolate stuffed Jack-O’-Lantern cookies are soft, buttery brown sugar cookies filled with creamy milk chocolate and carved into whimsical Jack-O’-Lantern faces. Ingredients
2 ½ cups (310 g) all-purpose flour ½ teaspoon baking powder ½ teaspoon salt 1 cup (225 g) unsalted butter, softened 1 cup (200 g) packed brown sugar ½ cup (100 g) granulated sugar 1 large egg 1 teaspoon vanilla extract 8 ounces (225 g) milk chocolate, melted or chopped Orange food coloring gel (optional) Black gel icing or melted dark chocolate for details (optional) Sprinkles or edible glitter (optional)
Instructions
1. In a bowl, whisk together flour, baking powder, and salt. In another bowl, cream butter, brown sugar, and granulated sugar until light and fluffy. Beat in egg and vanilla. 2. Gradually add dry ingredients and mix to form dough. Divide in half and tint one half with orange food coloring if desired. Wrap and chill for 30 minutes. 3. Preheat oven to 350°F (175°C). Roll dough to ¼-inch thickness and cut with pumpkin-shaped cookie cutter. Cut Jack-O’-Lantern faces into half of the cookies. 4. Place whole cookies on lined baking sheets and spoon or pipe melted chocolate in the center. Top with carved cookies and press gently to seal. 5. Bake 10–12 minutes until edges are lightly golden. Cool on racks before decorating further if desired.
