- 1/2 cup light corn syrup
- 1 cup dry roasted peanuts (salted or unsalted)
- 1 tablespoon unsalted butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
Instructions
- Mix Base: In a microwave-safe glass bowl, stir sugar and corn syrup until combined.
- Microwave: Microwave on high for 4 minutes until bubbling.
- Add Peanuts: Stir in peanuts and microwave another 3–4 minutes.
- Butter & Vanilla: Carefully stir in butter and vanilla. Microwave 1 more minute.
- Finish: Immediately stir in baking soda (mixture will foam).
- Spread: Pour onto parchment-lined baking sheet and spread evenly.
- Cool: Let cool completely before breaking into pieces.
