This easy Mexican Pizza recipe combines the best of tacos and pizza in one crispy, cheesy, flavorful dish! Perfect for busy weeknights, school lunches, or parties, this homemade version is fresh, customizable, and family-friendly.
Ingredients
1 pound (450 g) ground beef 1 packet (28 g) taco seasoning ½ cup (120 ml) water 1 can (16 oz / 450 g) refried beans 8 small (6–8 inch) flour tortillas 1 ½ cups (170 g) shredded cheddar cheese 1 ½ cups (170 g) shredded Monterey Jack cheese 1 cup (240 g) salsa or taco sauce 1 tomato, diced ¼ cup (25 g) sliced green onions ¼ cup (30 g) black olives (optional) Non-stick spray or a drizzle of oil
Instructions
1. Spray a skillet with oil and heat over medium-high. Toast each tortilla 1–2 minutes per side until golden. Set aside. 2. In a skillet, cook ground beef over medium heat until browned. Drain fat, then stir in taco seasoning and water. Simmer for 2–3 minutes. Heat refried beans in a small saucepan. 3. Preheat oven to 400°F (200°C). Line a baking sheet with parchment. Spread beans on one tortilla, top with beef, then another tortilla. Spread salsa over top, then sprinkle with cheeses, tomato, green onions, and olives. 4. Bake for 8–10 minutes, until cheese is bubbly. Slice into quarters and serve warm.
Notes
• Crisp tortillas before assembling to avoid sogginess. • Use freshly grated cheese for better melt and flavor. • Make ahead by preparing beef and beans, then assemble and bake just before serving. • Vegetarian version: replace beef with black beans or lentils.
