- 1 cup salsa (mild or medium)
- 1 cup crushed tortilla chips or breadcrumbs
- 2 large eggs
- 1 small onion, finely diced
- 1 bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheese (optional)
- Extra salsa, for topping
Instructions
- Preheat: Preheat oven to 375°F (190°C). Grease a loaf pan or line with parchment paper.
- Mix Ingredients: In a large bowl, combine ground beef, crushed tortilla chips, eggs, salsa, onion, bell pepper, garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Mix gently until just combined.
- Shape: Transfer mixture to the prepared loaf pan and gently press into shape.
- Top: Spread a thin layer of salsa over the top for added moisture and flavor.
- Bake: Bake uncovered for 50–60 minutes, until the internal temperature reaches 160°F (71°C).
- Rest: Remove from oven and let rest for 10 minutes before slicing.
