Ingredients

Scale

For the Filling:

  • 2 lbs ground beef (or turkey)
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 packet taco seasoning (or homemade)
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (4 oz) can green chiles
  • 1 (15 oz) can fire-roasted tomatoes
  • ½ cup sour cream or Greek yogurt (optional for creaminess)

For Assembly:

  • 18 corn tortillas (or flour if preferred)
  • 6 cups shredded Mexican blend cheese
  • 1 cup salsa or enchilada sauce
  • Chopped cilantro, sliced jalapeños, and avocado for topping (optional)

Instructions

Step 1: Cook the Filling

In a large skillet, cook ground beef and onion over medium-high heat until browned. Add garlic and cook for 1 more minute. Drain excess fat.

Stir in taco seasoning, black beans, green chiles, fire-roasted tomatoes, and sour cream (if using). Simmer for 5–7 minutes to blend flavors.

Step 2: Preheat Oven

Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.

Step 3: Assemble the Lasagna

Spread a thin layer of salsa or enchilada sauce on the bottom. Layer 6 tortillas, overlapping to cover.

Add ⅓ of the beef mixture and 2 cups of cheese. Repeat layers two more times, ending with cheese on top.

Step 4: Bake

Cover with foil and bake for 20 minutes. Uncover and bake an additional 10 minutes until bubbly and golden.

Step 5: Rest & Serve

Let the lasagna sit for 10 minutes before slicing. Top with chopped cilantro, avocado slices, or jalapeños if desired.

Notes

  • Serve with a side of Mexican rice or tortilla chips.
  • Add a fresh salad with lime vinaigrette to balance the richness.
  • Pair with a mango margarita or chilled Mexican lager.
