Ingredients
For the Filling:
- 2 lbs ground beef (or turkey)
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 packet taco seasoning (or homemade)
- 1 (15 oz) can black beans, rinsed and drained
- 1 (4 oz) can green chiles
- 1 (15 oz) can fire-roasted tomatoes
- ½ cup sour cream or Greek yogurt (optional for creaminess)
For Assembly:
- 18 corn tortillas (or flour if preferred)
- 6 cups shredded Mexican blend cheese
- 1 cup salsa or enchilada sauce
- Chopped cilantro, sliced jalapeños, and avocado for topping (optional)
Instructions
In a large skillet, cook ground beef and onion over medium-high heat until browned. Add garlic and cook for 1 more minute. Drain excess fat.
Stir in taco seasoning, black beans, green chiles, fire-roasted tomatoes, and sour cream (if using). Simmer for 5–7 minutes to blend flavors.
Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.
Spread a thin layer of salsa or enchilada sauce on the bottom. Layer 6 tortillas, overlapping to cover.
Add ⅓ of the beef mixture and 2 cups of cheese. Repeat layers two more times, ending with cheese on top.
Cover with foil and bake for 20 minutes. Uncover and bake an additional 10 minutes until bubbly and golden.
Let the lasagna sit for 10 minutes before slicing. Top with chopped cilantro, avocado slices, or jalapeños if desired.
