Whether baked in the oven or cooked as a stovetop cake, every slice delivers pure vanilla bliss that truly melts in your mouth.

Ingredients

Scale
    • For the Cake:
    • 1 cup (230g) unsalted butter, softened
    • 1½ cups (300g) granulated sugar
    • 4 large eggs, room temperature
    • 2½ cups (310g) all-purpose flour, sifted
    • 2½ teaspoons baking powder
    • ½ teaspoon salt
    • 1 cup (240ml) whole milk or buttermilk
    • 2 teaspoons pure vanilla extract

  • Optional Add-Ons:
  • Zest of 1 lemon (for brightness)
  • ½ cup sweetened shredded coconut
  • A handful of white chocolate chips

Instructions

    1. Preheat and prepare: Preheat oven to 350°F (175°C). Grease and line your pan with parchment paper.
    2. Cream butter and sugar: Beat butter and sugar together for 3–4 minutes until pale and fluffy.
    3. Add eggs and vanilla: Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
    4. Combine dry ingredients: In a separate bowl, whisk flour, baking powder, and salt.
    5. Mix wet and dry: Alternate adding flour mixture and milk to the butter mixture, beginning and ending with flour. Mix gently until smooth.
    6. Bake: Pour into prepared pan and bake for 30–40 minutes, or until a toothpick inserted in the center comes out clean.
    7. Cool and serve: Let cool for 10 minutes in the pan, then transfer to a rack. Serve with whipped cream or fruit.

  1. Stovetop method: Pour batter into a greased skillet or pot, cover with a tight lid, and cook on low heat for 35–40 minutes until firm and springy.

Notes

  • Use room temperature ingredients for the best texture.
  • Don’t overmix the batter — it keeps the crumb soft and airy.
  • Start checking doneness at 30 minutes to prevent dryness.
  • Cool gradually to avoid cake collapse.
  • Top with glaze, custard, or berries for extra flavor and elegance.
