Ingredients
For the Tarts (Makes 6 Individual Tarts):
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 200g fresh spinach (approx. 7 oz)
- 100g feta cheese, crumbled (approx. 3.5 oz)
- 1 large egg
- Salt and pepper, to taste
- 1 teaspoon dried oregano (optional)
- 1 sheet of ready-rolled puff pastry (roughly 320g or 11 oz)
- 1 egg (for egg wash)
Instructions
1. Preheat and Prep:
Preheat your oven to 200°C (392°F) or 180°C (356°F) fan. Line a baking tray with parchment paper.
2. Cook the Spinach:
In a pan, heat olive oil over medium heat. Add minced garlic and cook for 1 minute. Add the spinach and sauté until wilted, about 2-3 minutes. Drain any excess liquid and allow it to cool slightly.
3. Make the Filling:
Chop the spinach and mix it in a bowl with crumbled feta cheese, 1 beaten egg, oregano (if using), salt, and pepper.
4. Prepare the Pastry:
Unroll the puff pastry and cut into 6 equal rectangles. Place them on the baking tray.
5. Fill and Seal:
Spoon the spinach and feta mixture onto one half of each rectangle, leaving space around the edges. Fold the other half over to create a pocket and seal the edges using a fork.
6. Egg Wash and Bake:
Brush the tops with a beaten egg for a golden finish. Bake for 18–22 minutes or until the tarts are puffed and golden brown.
7. Cool and Serve:
Allow them to cool slightly before serving. Enjoy warm or store for later!
Notes
- efrigerate leftovers in an airtight container for up to 3 days
- Reheat in the oven at 180°C (356°F) for 8–10 minutes for best texture
- Freeze before baking – wrap uncooked tarts individually and store for up to 2 months. Bake from frozen, adding 5 extra minutes
