For the Chicken & Vegetables:
2 large chicken breasts, cut into chunks
2zucchinis, sliced into rounds
1red bell pepper, sliced
1yellow bell pepper, sliced
½red onion, sliced
1 cupcherry tomatoes, halved
3 cloves garlic, minced
¼ cupKalamata olives, sliced
2 tablespoonsolive oil
1 teaspoondried oregano
½ teaspoondried basil
½ teaspoonpaprika
½ teaspoonsalt
¼ teaspoonblack pepper
For Garnish:
¼ cupcrumbled feta cheese
2 tablespoonsfresh parsley, chopped
Lemon wedges for serving
Instructions
Step 1: Preheat & Prepare the Baking Dish
Preheat oven to 400°F (200°C).
Lightly grease a 9×13-inch baking dish with olive oil or nonstick spray.
Step 2: Prepare the Chicken & Vegetables
In a large mixing bowl, combine chicken, zucchini, bell peppers, red onion, cherry tomatoes, garlic, and olives.
Drizzle with olive oil, then sprinkle with oregano, basil, paprika, salt, and black pepper. Toss well to coat evenly.
Step 3: Assemble & Bake
Spread everything evenly in the baking dish.
Bake for 25-30 minutes, or until the chicken is fully cooked (internal temperature 165°F/75°C).
Remove from oven and let rest for 5 minutes.
Step 4: Garnish & Serve
Sprinkle with crumbled feta cheese and fresh parsley.
Serve with lemon wedges for extra flavor.
