For the Chicken & Vegetables:
- 2 large chicken breasts, cut into chunks
- 2 zucchinis, sliced into rounds
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- ½ red onion, sliced
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- ¼ cup Kalamata olives, sliced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
For Garnish:
- ¼ cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
- Lemon wedges for serving
Instructions
Step 1: Preheat & Prepare the Baking Dish
- Preheat oven to 400°F (200°C).
- Lightly grease a 9×13-inch baking dish with olive oil or nonstick spray.
Step 2: Prepare the Chicken & Vegetables
- In a large mixing bowl, combine chicken, zucchini, bell peppers, red onion, cherry tomatoes, garlic, and olives.
- Drizzle with olive oil, then sprinkle with oregano, basil, paprika, salt, and black pepper. Toss well to coat evenly.
Step 3: Assemble & Bake
- Spread everything evenly in the baking dish.
- Bake for 25-30 minutes, or until the chicken is fully cooked (internal temperature 165°F/75°C).
- Remove from oven and let rest for 5 minutes.
Step 4: Garnish & Serve
- Sprinkle with crumbled feta cheese and fresh parsley.
