  • 1 yellow bell pepper, sliced
  • ½ red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • ¼ cup Kalamata olives, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For Garnish:

  • ¼ cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges for serving

Instructions

Step 1: Preheat & Prepare the Baking Dish

  1. Preheat oven to 400°F (200°C).
  2. Lightly grease a 9×13-inch baking dish with olive oil or nonstick spray.

Step 2: Prepare the Chicken & Vegetables

  1. In a large mixing bowl, combine chicken, zucchini, bell peppers, red onion, cherry tomatoes, garlic, and olives.
  2. Drizzle with olive oil, then sprinkle with oregano, basil, paprika, salt, and black pepper. Toss well to coat evenly.

Step 3: Assemble & Bake

  1. Spread everything evenly in the baking dish.
  2. Bake for 25-30 minutes, or until the chicken is fully cooked (internal temperature 165°F/75°C).
  3. Remove from oven and let rest for 5 minutes.
