For the Chicken Burgers:

  • 1 lb (450g) ground chicken
  • 1 cup (30g) fresh spinach, finely chopped
  • 1/2 cup (60g) white cheddar cheese, shredded
  • 1/4 cup (30g) breadcrumbs (or almond flour for a low-carb option)
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 tbsp olive oil (for cooking)

For Serving:

  • Whole wheat burger buns or lettuce wraps
  • Sliced tomatoes and onions
  • Greek yogurt or tzatziki sauce

Instructions

Step 1: Prepare the Chicken Mixture

In a large mixing bowl, combine the ground chicken, chopped spinach, shredded white cheddar, breadcrumbs, egg, garlic powder, onion powder, salt, pepper, and paprika. Mix everything well until fully combined but avoid overmixing, as this can make the burgers tough.

Step 2: Shape the Patties

Divide the mixture into 4 equal portions and shape them into round burger patties, about ½ inch thick. If the mixture is too sticky, lightly grease your hands with olive oil.

Step 3: Cook the Burgers

Heat 1 tbsp olive oil in a grill pan or skillet over medium heat. Cook the patties for 5-6 minutes per side, flipping once, until they reach an internal temperature of 165°F (75°C).

Step 4: Assemble & Serve

Place the cooked burgers on a toasted bun or lettuce wrap. Add sliced tomatoes, onions, and a dollop of Greek yogurt or tzatziki for extra Mediterranean flavor. Serve immediately and enjoy!
