Instructions

  1. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onion, garlic, and celery. Cook 5–6 minutes until soft and translucent.
  2. Add spices & cauliflower: Stir in cumin, turmeric, cauliflower florets, and optional potato. Sauté 2–3 minutes.
  3. Simmer: Pour in vegetable broth. Bring to a boil, then reduce heat and simmer 20 minutes until cauliflower is fork-tender.
  4. Blend: Use an immersion blender (or transfer to blender) and puree until creamy and smooth.
  5. Finish: Stir in lemon juice, salt, and pepper. Taste and adjust seasonings.
  6. Serve: Garnish with fresh herbs and a drizzle of olive oil. Enjoy warm with bread or salad.
