These Mediterranean Baked Feta Eggs are creamy, flavorful, and perfectly fit into a healthy Mediterranean diet meal plan. With baked eggs nestled in juicy tomatoes and melty feta, this dish works for breakfast, brunch, or dinner and feels elegant yet simple.
Ingredients
6–8 ounces feta cheese block 2 cups cherry or grape tomatoes, halved 2–3 tablespoons olive oil 2 cloves garlic, minced Pinch red pepper flakes (optional) 4 large eggs Salt and black pepper, to taste Chopped fresh parsley or basil, for garnish Optional: whole-grain bread or pita, for serving
Instructions
1. Preheat oven to 375°F (190°C) and lightly oil a baking dish. 2. Arrange cherry tomatoes and garlic around edges, season with salt, pepper, and red pepper flakes. 3. Place feta block in center, drizzle with remaining olive oil. Bake 15–20 minutes until tomatoes soften and feta is golden. 4. Remove from oven, crack eggs over tomatoes, and bake another 7–10 minutes until whites are set and yolks still runny. 5. Garnish with fresh herbs and serve warm with bread if desired.
Notes
• Use a block of feta for the creamiest texture. • Watch the eggs closely to avoid overcooking. • Add spinach, kale, or chickpeas for more greens and protein. • Sprinkle za’atar or sumac for a Middle Eastern twist.
