  • 1/2 cup (113g) unsalted butter, melted and cooled
  • 1 tsp vanilla extract

Optional Glaze:

  • 2 tbsp raw honey
  • 1 tbsp mead
  • 1/2 tsp cinnamon

Instructions

  1. Preheat Oven: Heat to 350°F (175°C). Grease and line a 9-inch round cake pan.
  2. Mix Dry Ingredients: In a bowl, sift flour, baking soda, baking powder, cinnamon, cardamom, cloves, and salt.
  3. Whisk Wet Ingredients: In another bowl, whisk eggs, buttermilk, mead, honey, brown sugar, butter, and vanilla until smooth.
  4. Combine: Gently stir wet mixture into dry until just combined. Do not overmix.
  5. Bake: Pour batter into pan. Bake 35–40 minutes until a toothpick inserted comes out clean.
  6. Cool: Let rest 15–20 minutes, then transfer to a wire rack.
  7. Optional Glaze: Warm honey, mead, and cinnamon in a saucepan. Drizzle over warm cake.
