Ingredients

  • 1 small yellow onion, finely chopped

  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons tomato paste
  • 1 can (15 ounces) crushed tomatoes
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • Salt and black pepper to taste
  • 3 cups baby spinach, packed
  • Juice of half a lemon
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and sauté for 4 minutes until softened.
  2. Stir in garlic, oregano, and red pepper flakes. Cook for 1 minute until fragrant.
  3. Add tomato paste and stir to coat. Cook 1 minute to deepen flavor.
  4. Pour in crushed tomatoes and stir. Simmer for 5 minutes.
  5. Add white beans and cook 5–7 minutes to blend flavors.
  6. Fold in spinach and cook 2–3 minutes until wilted.
  7. Season with salt, pepper, and lemon juice. Garnish with herbs and serve warm.
