Instructions
- Prepare the Mango Purée: Peel and slice ripe mangoes, then blend until smooth. Strain if needed for a silky texture.
- Mix the Dough: In a microwave-safe bowl, whisk together glutinous rice flour, sugar, mango purée, and water until smooth. Add coconut milk for extra richness if desired.
- Cook the Mochi: Cover with plastic wrap and microwave for 1 minute. Stir, then microwave for another minute. Continue in 30-second intervals until the mixture becomes translucent and sticky.
- Dust and Shape: Dust your work surface with cornstarch. Transfer cooked mochi, let cool slightly, then divide into small balls. Flatten, add filling if using, and fold into shape.
- Coat and Chill: Roll mochi in cornstarch or shredded coconut. Chill for 30 minutes before serving.
