Ingredients

For the curry: 1 ½ pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces 1 tablespoon vegetable oil 1 medium onion, diced 3 cloves garlic, minced 1 tablespoon fresh ginger, grated 2 teaspoons curry powder 1 teaspoon turmeric ½ teaspoon cumin ½ teaspoon chili flakes (optional) 1 (13.5 oz) can coconut milk 1 large ripe mango, diced (or 2 small honey mangoes) 1 teaspoon honey (optional) Salt and pepper, to taste Juice of half a lime Fresh cilantro, chopped (for garnish) Optional toppings: Toasted cashews Thinly sliced red chili Shredded coconut Additional mango slices


Instructions

1. Dice chicken, mango, and chop onion, garlic, and ginger. 2. Heat oil in a skillet over medium-high heat. Season chicken and sear for 4–5 minutes until browned. Remove and set aside. 3. In the same skillet, cook onion for 3–4 minutes. Add garlic and ginger, cook for another 30 seconds. 4. Stir in curry powder, turmeric, cumin, and chili flakes. Toast spices for 1–2 minutes. 5. Pour in coconut milk, stir, and return chicken to skillet. Simmer for about 10 minutes until chicken is cooked through. 6. Add mango and honey. Simmer for 2–3 more minutes. Finish with lime juice. 7. Garnish with cilantro and optional toppings. Serve hot with rice or naan.

Notes

• Use ripe but firm mangoes for best texture. • Adjust chili flakes for desired heat level. • Add lime juice at the end to brighten flavors. • Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
