For the Cobbler Base:

  • ½ cup (113g) unsalted butter, melted
  • 1 cup (120g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup (180ml) milk
  • 1 teaspoon vanilla extract

For the Lemon Topping:

  • 1 cup (240ml) hot water
  • ½ cup (100g) granulated sugar
  • ¼ cup (60ml) fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

Step 1: Preheat & Prepare the Baking Dish

  1. Preheat your oven to 350°F (175°C).
  2. Pour the melted butter into a 9×9-inch baking dish.

Step 2: Make the Batter

  1. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  2. Stir in the milk and vanilla extract until smooth.
  3. Pour the batter evenly over the melted butter in the baking dish. Do not stir.

Step 3: Prepare the Lemon Topping

  1. In a small bowl, mix hot water, sugar, fresh lemon juice, and lemon zest.
  2. Gently pour this mixture over the batter. Do not stir—it will bake into a magical sauce!

Step 4: Bake & Serve

  1. Bake for 40-45 minutes, or until the top is golden brown and set.
  2. Let cool for 10 minutes, then serve warm with ice cream or whipped cream.

Notes

  • Use fresh lemons – Freshly squeezed lemon juice and zest give the best flavor.
  • Don’t mix the layers – The magic happens when they bake separately!
  • Let it rest before serving – This helps the sauce thicken slightly.
