For the Cobbler Base:

- 1 cup (120g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup (180ml) milk
- 1 teaspoon vanilla extract
For the Lemon Topping:
- 1 cup (240ml) hot water
- ½ cup (100g) granulated sugar
- ¼ cup (60ml) fresh lemon juice
- 1 tablespoon lemon zest
Instructions
Step 1: Preheat & Prepare the Baking Dish
- Preheat your oven to 350°F (175°C).
- Pour the melted butter into a 9×9-inch baking dish.
Step 2: Make the Batter
- In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
- Stir in the milk and vanilla extract until smooth.
- Pour the batter evenly over the melted butter in the baking dish. Do not stir.
Step 3: Prepare the Lemon Topping
- In a small bowl, mix hot water, sugar, fresh lemon juice, and lemon zest.
- Gently pour this mixture over the batter. Do not stir—it will bake into a magical sauce!
Step 4: Bake & Serve
- Bake for 40-45 minutes, or until the top is golden brown and set.
- Let cool for 10 minutes, then serve warm with ice cream or whipped cream.
