  • ¾ cup unsweetened cocoa powder (75g)
  • ½ cup whole milk (120ml)
  • ½ cup unsalted butter (113g), cut into cubes
  • 1 tsp vanilla extract (5ml)
  • 2½ cups powdered sugar (300g), sifted

Instructions

1. Prepare the Pan
Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides. This makes it easy to lift the fudge out once set.

2. Combine Dry Ingredients
In a medium saucepan, mix together granulated sugar and unsweetened cocoa powder. Stir to combine.

3. Add Milk and Heat
Pour in the milk, and stir over medium heat until the mixture begins to boil. Stir constantly to prevent burning.

4. Boil and Butter Up
Once boiling, add the cubed butter and stir until melted and fully incorporated.

5. Cool Slightly, Then Flavor
Remove from heat and let the mixture cool for 2–3 minutes. Stir in the vanilla extract.

6. Incorporate Powdered Sugar
Gradually add sifted powdered sugar in batches, stirring vigorously. Use an electric mixer for a silky finish if desired.

7. Spread and Set
Pour the fudge into your prepared pan. Use a spatula to spread evenly. Smooth the top and refrigerate for 1–2 hours or until firm.

8. Slice and Serve
