  • Author: Lyndy
  • Total Time: 20 minutes
  • Yield: 4 servings 1x

Description

This quick and healthy low-carb Mongolian ground beef and cabbage is packed with bold flavors and ready in just 20 minutes! Savory, sweet, and a little spicy, it’s a satisfying keto-friendly one-pan dinner with tender sautéed cabbage instead of rice — perfect for busy weeknights.

Ingredients

Scale

1 pound (450 g) lean ground beef 4 cups (300 g) shredded green cabbage 3 cloves garlic, minced 1 teaspoon fresh ginger, minced 3 tablespoons soy sauce (or tamari for gluten-free) 2 tablespoons brown sugar substitute (like erythritol or monk fruit) 1 tablespoon sesame oil 2 tablespoons water 1 tablespoon rice vinegar ½ teaspoon red pepper flakes (optional) 1 teaspoon sesame seeds (optional) 2 green onions, thinly sliced, for garnish

Instructions

1. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until no longer pink (about 5–6 minutes). Drain excess fat if needed. 2. In a small bowl, whisk together soy sauce, brown sugar substitute, water, sesame oil, rice vinegar, garlic, ginger, and red pepper flakes. Pour over cooked beef and stir. Simmer 2–3 minutes. 3. Add shredded cabbage to the skillet. Toss everything together and cook for 5–6 minutes, until cabbage softens slightly but stays crisp. 4. Remove from heat, garnish with sesame seeds and sliced green onions, and serve hot.

Notes

• Use freshly shredded cabbage for best texture. • Adjust sweetness to taste depending on your sweetener. • Toast sesame seeds for a nuttier flavor. • Don’t overcook cabbage — it should remain slightly crisp.
