Louisiana Voodoo Fries : Cheesy & Crispy Treat

For the Fries:

  • 3 large russet potatoes, cut into fries
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika

For the Cajun Cheese Sauce:

  • 1 cup shredded cheddar cheese (100g)
  • ½ cup heavy cream (120ml)
  • 1 tablespoon butter (14g)
  • ½ teaspoon Cajun seasoning
  • ¼ teaspoon garlic powder

For the Voodoo Topping:

  • 1 teaspoon Cajun seasoning
  • ½ teaspoon red pepper flakes (optional, for extra heat)
  • 2 tablespoons green onions, chopped
  • 2 tablespoons pickled jalapeños (optional)
  • 2 tablespoons ranch dressing (optional)

Instructions

Step 1: Prepare the Fries

  1. Preheat the oven to 425°F (220°C). If using an air fryer, preheat to 400°F (200°C).
  2. Cut the potatoes into fries and soak them in cold water for 30 minutes to remove excess starch.
  3. Drain and pat dry, then toss with olive oil, salt, black pepper, garlic powder, and smoked paprika.
  4. Spread evenly on a baking sheet and bake for 25-30 minutes, flipping halfway.
  5. For air fryer: Cook at 400°F (200°C) for 15-18 minutes, shaking the basket occasionally.

Step 2: Make the Cajun Cheese Sauce

  1. In a saucepan over low heat, melt butter and add heavy cream.
  2. Stir in cheddar cheese, Cajun seasoning, and garlic powder, whisking until smooth.
  3. Keep warm on low heat, stirring occasionally.

Step 3: Assemble the Voodoo Fries

  1. Place the hot fries on a serving plate.
  2. Drizzle with Cajun cheese sauce.
  3. Sprinkle with extra Cajun seasoning, red pepper flakes, green onions, and pickled jalapeños.
  4. For a creamy twist, drizzle with ranch dressing (optional).

Notes

  • Soak the Fries: This removes starch and makes them extra crispy.
  • Use Freshly Shredded Cheese: Pre-packaged cheese won’t melt as smoothly in the sauce.
  • Adjust the Spice Level: Add more Cajun seasoning or hot sauce for extra heat.
